Turning is nothing but a motion in the curved (circular) path which needs centripetal force.
Though the friction between the road and tires of cycles provides the necessary centripetal force, when velocity is high, the friction is not enough.
If a cyclist bends in the direction of turning, the normal force acting on him provides the additional centripetal force.
If a cyclist doesn’t bend, he would fall in the other direction of the turning. So, to overcome this, the cyclist would bend during the turn.
