Rancidity Meaning The word rancidity refers to the spoilage of food.

Whenever food materials are placed in the open air, the fat and oil present in the food materials are oxidised.

Types of Rancidity Rancidity is divided into three types.  Hydrolytic rancidity Oxidative rancidity Microbial rancidity

- Hydrolytic Rancidity is caused by lipase enzymes of bacterial origin.  - Short-chain fatty acids change the flavour and aroma of food. Examples: Sour milk.

Hydrolytic Rancidity

Oxidative Rancidity Oxidative Rancidity is caused by ketones and aldehydes. This may occur in the presence of heat, Oxygen and heavy metals.

The colour and taste of potato chips change when they are exposed to air and light.

Microbial Rancidity is caused by microorganisms in the presence of water. Example:  Spoilage of food by bacteria and fungi.

Effects of Rancidity Rancid food materials produce a bad smell and have an unpleasant taste.

Effects of Rancidity Rancid oils have free radicals, which may increase some diseases like cancer and heart diseases.

Rancidity can be prevented by storing food materials in airtight containers.
