What Is Emulsion And How Does It Work?

'Emulsion' is a mixture of two or more non-homogenous types of liquids where one of the liquids contains the dispersion of the different forms of liquids.

The Fat-Soluble part sticks to the oil and the water-soluble part sticks to the water.

Creating an effective barrier between the dispersed phase and dispersion medium. 

In the Oil-water mixture, oil particles do not come together to form any larger particles.

This prevents coalescing, thereby stabilising the emulsion.
