Differences Between Sterilization and Pasteurization

Both sterilization and pasteurization are used to remove microorganisms.

Microorganisms are completely eliminated in the sterilization process, including the most resistant bacteria and spores.

In the pasteurization process, microorganisms are removed partially. Most resistant bacteria and spores can not be removed.

Sterilized food can be stored for a long time, but Pasteurized food can not be stored for a long time without refrigeration.
